Simple, easy to make, chocolatey and healthy cookies. These eggless cookies are sure to satisfy everyone’s chocolate cravings! An amazing combination of soft yet crispy cookies, using only whole wheat flour (no maida!) will add to your Christmas delights.
Preparation time: 30 minutes
Serves approximately: 30 cookies, each cookie is about 15 g in weight
INGREDIENTS
- Whole Wheat flour ( Atta) – 150 g
- Butter (soft) – 150 g
- Sugar (finely ground) – 125 g
- Cashew nuts (finely ground) – 15 g
- Chocolate dark – 20 g
- Cocoa Powder – 20 g
- Vanilla Custard Powder – 20 g
- Milk – 1 tsp.
- Orange Essence or fresh Orange juice – 1 tbsp.
PREPARATION
- Grate or cut the dark chocolate finely. Transfer it into a bowl and pour about two teaspoons of very hot milk on it. Wait for five minutes and then stir well. The chocolate melts and you get a smooth, thick chocolate sauce.
- Separately, grind the Cashew nuts into a fine powder
- In a medium sized bowl, beat the butter with an electric hand mixer until it is nice and soft. Add finely ground sugar and mix well to get a nice, creamy texture.
- Add cocoa powder, the previously prepared thick chocolate sauce, powdered cashew nuts, vanilla custard powder and fresh orange juice or orange essence and mix well.
- Slowly and carefully, add the whole wheat flour to the creamy chocolate mixture to form a medium soft dry dough. If the dough is still too dry, a little curd or milk can be added.
- Make small balls of about 15 g each from the dough. To make a shape or design on the cookie, press a fork on top of each ball.
- Place on a baking tray and bake for 10-15 min on 180 -200 C in a preheated oven. Once it releases a nice aroma and the cookies have the right colour, remove and place on a rack to cool.
- After they are completely cool, store these very tasty chocolate cookies in an airtight container. They stay fresh for up to 3 weeks.
- Eat by itself, with tea, coffee, milk or serve your guests. These wholesome chocolate cookies will definitely brighten up your winter holidays!
